Swiss Pancakes

You can whip this up and enjoy it with syrup or cool whip and fresh fruit.

6 eggs
1 c milk
1 c flour
1 tsp salt
5 T butter or margarine

Turn oven on to 425 degrees. In a 9x13-inch baking dish, add 5 T butter or margarine and place in oven to melt while you prepare batter.

Whip eggs until thick and light colored. Add milk, flour and salt. Mix thoroughly. Pour batter into a pan of melted margarine or butter.

Bake at 425 degrees for 15 to 20 minutes, until a light golden brown. It should resemble peaks and valleys. Serve immediately. Yum!

  1. Made this the other day....Alison LOVED it! I think it will become a weekly meal once our chickens are laying eggs. Six eggs is a lot, but not when we're getting six eggs a day. Anyway, I used 1/2 teaspoon of salt and it still tasted the same. And I cooked it at 400 degrees for about 16 or 17 minutes....perfect! I took a picture of it--I'll email it to you so that you can uplaod it to the post. Once it uploads, cut it and paste it to the bottom of your text. Then you'll have the recipe and a picture right under it.

  2. I always add a teaspoon of vanilla extract, I think it adds depth to the flavor that was missing before.
